Cereal Milk Ice Cream

I’ve made this ice cream many times because it’s a popular one in the household and amongst some friends. It’s also my personal favourite! I loved the concept of cereal milk ice cream when I heard of it (Christina Tosi, of course) tried a few local scoop shops that had it but nothing really stuck.

Until this!

Cereal milk ice cream + fruity pebbles. Recipe adapted from Ample Hills Creamery cookbook with some tips from Christina Tosi’s Momofuku Milkbar book.

It’s a pretty versatile recipe and you can switch up the cereal for any of your favourites. I’m a basic cornflakes kinda girl so this is right up my alley. I love adding fruity pebbles ‘cus of the colour!

It’s a keeper for sure. And trust me when I say it tastes as good (or better) than it looks!

Black Sticky Rice

  1. Lightly toast corn flakes until golden brown.

  2. In a large saucepan, add milk and heat until warm (do not boil). Add cornflakes, stir well, cover and let steep for 20 minutes.

  3. Strain cereal milk, pushing down on the cornflakes to extract as much milk as possible. You should get about 330g-400g of cereal milk.

    It's ok if some "pulp" gets passed through to the milk.
  4. Return cereal milk back to large saucepan. Add sugar and skim milk powder, whisk well to combine.

  5. Add heavy cream. Mix well.

  6. Put saucepan over stove and heat until steam begins to rise, then remove from heat.

  7. In a medium bowl, add two egg yolks. Slowly stream in warmed milk mixture while whisking to temper egg yolks. Add about 3-5 ladles of milk in total.
  8. Return tempered egg mixture back to saucepan and return to heat, continually stirring with a rubber spatula until mixture coats the back of the spatula.

  9. Pour into a resealable plastic bag, chill in an ice bath and store in fridge overnight until very cold.

Fruity Pebbles Mix

  1. In a microwavable bowl, add butter and microwave until melted.

  2. Add fruity pebbles and skim milk powder. Mix well to combine.

  3. Spread on baking sheet and toast until light golden brown.

Churn + Assemble

  1. Once mixture is completely chilled, churn in your ice cream mixture per manufacturers' instructions.

  2. Layer ice cream with fruity pebbles mix, and store in freezer until firm.
