I had some sourdough discard leftover from a recent feed and wanted to find a way to utilize them in a recipe that was easy and quick. Typically most Min Jiang Kueh recipes call for yeast but I didn’t have any on hand that day and just went ahead without it. I didn’t think it impacted the texture much and overall the family enjoyed it — it was a great way to use up the sourdough discard without wastage!
I threw together crushed peanuts and sugar in a 1:1 ratio for the filling, but any other spreads like peanut butter or Nutella would work as well.
Min Jiang Kueh 面煎粿 (Sourdough Discard, No Yeast)
Min Jiang Kueh is a common snack in Singapore - a fluffy pancake filled with with peanuts. This no-yeast recipe uses sourdough discard.

Instructions

In a bowl, mix wet ingredients: Sourdough discard, milk and eggs.

Add dry ingredients: Flour, sugar, baking soda and mix until just combined and batter is smooth.

Heat and oil a non-stick pan. Pour batter into pan and swirl to coat pan. (~1 cup of batter per pancake, depending on the size of your pan)

Let cook until pancake surface is no longer wet. Add filling of your choice and fold into half.

Slice into wedges and serve.
