Dorayaki is one of my favourite Japanese snacks! I first saw it on Doraemon shows and knew it as "Doraemon's pancake", I never actually knew it was a thing in real life (this was before I knew how to validate things on the internet alright haha)
This is one thing I used to look out for when I visit a Japanese supermarket. Although, they're so simple to make I don't see myself reaching out for them on shelves anymore. I use store-bought red bean paste for convenience, and the batter can be made with a single bowl.
Dorayaki is a Japanese confection, sweet red bean paste sandwiched between two honey pancakes.
In a mixing bowl, add eggs, sugar and honey, mix to combine.
Sift all-purpose flour and baking powder, mix to combine.
Cover and refrigerate batter for about 15 minutes.
Heat non-stick pan on low heat, lightly grease surface.
Assemble Dorayaki: Place a pancake face down, add a ball of red bean paste and cover with another pancake. Press to compress. Secure with cling wrap and keep wrapped until ready to serve.
