BLACKPINK Cookies & Cream Ice Cream

pinit

Classic flavours, but with BLACKPINK Oreos.

This idea sparked from my colleague’s daughter, who’s a fan of both BLACKPINK and Cookies & Cream. He brought home some C&C ice cream I made and she finished almost an entire pint in one sitting. I don’t know if I should be happy she likes it, or guilty I fed her so much sweets lol.

This recipe is basically my go-to Malted milk ice cream recipe, folded with crushed Oreos. If you don’t have malted milk powder, just omit it.

The BLACKPINK Oreos were sold out islandwide so my colleague took one pack from his daughter’s stash for me lol! One pack wasn’t sufficient so I mixed in another pack of Oreos, using a total of 2 of the 133g cylinder pack. I prefer removing the Oreo cream to avoid adding additional sweetness to the ice cream.

Works perfectly well even if you don’t have the pink Oreos – it’s just less cute 😉

  1. In a medium saucepan: Add sugar, skim milk powder, malted milk powder, milk. Whisk together until combined.

  2. Add heavy cream to the saucepan. Mix till combined.

  3. Separate egg yolks into a medium bowl. Keep egg whites for another recipe.

  4. Heat saucepan over stove, stirring continually until steam just begins to rise from the surface. Remove from heat.

  5. Temper egg yolks: Spoon warmed milk mixture into the egg yolk bowl, whisking constantly to avoid egg yolks from cooking. (I usually add about 1-2 cups of warmed milk in total)

  6. Return the egg yolk + warmed milk tempered mixture back into the saucepan. Return saucepan over low heat, stirring constantly with a heatproof spatula. Continue cooking until mixture thickens, when mixture coats the back of a spatula.

  7. Pour mixture into a resealable ziploc bag, or a bowl. Store in the fridge overnight until very cold.

In the event you didn't temper the egg yolks well and the mixture is lumpy, pour mixture through a sieve and discard any clumps.
  8. Just before churning ice cream, remove cream centers from Oreos, and chop Oreos into small pieces.

  9. Once ice cream mixture in fridge is extremely cold, churn it in your ice cream maker according to manufacturer's instructions. Just before the ice cream starts to come together, add in the chopped Oreos into the machine.

You can also add the Oreos when packing in your ice cream container. But I prefer to add it while churning for more even distribution.
  10. Serve immediately for soft-serve consistency, or pack it in an ice cream container and freeze for at least 4 hours.
