What I love about this recipe, apart from the fact that it's only 3 ingredients (4 if you include salt) is that you can easily switch up the flavour profile with the type of sugar used. I tried with both regular white sugar and brown sugar, and they tasted so different! The addition of brown sugar adds a warm molasses-ey taste. My personal preference is regular ol' sugar for a 'cleaner' coconut taste.

In a saucepan, add coconut cream, coconut water, sugar and salt. Heat on stove until sugars just dissolved.
Pour mixture into a resealable bag, let cool in fridge until very cold (I prefer to leave it for at least a day).
Churn mixture per instructions on your ice cream machine.
